Small Kitchen, Small Apple Crumbles, Big City, Big Love… These 4 little phrases illustrate well how I cooked my crumbles yesterday!
This recipe is not the shortest nor the easiest, but trust me you won’t regret taking your time in preparing this dish. These quantities are supposed to be enough for 10 people even though my experience shows it’s barely enough for 6 (Everyone will want to serve themselves several times).

For the Pastry:
- 125g of butter at room temperature
- 125g of sugar
- 125g of sifted flour
- 125g almond powder
- 1 pinch of salt
For the Apple Mix:
- 500g of apples
- 30g of dried raisins (optional)
- 1 tsp of cinnamon
- 15g of brown sugar
- 15g of butter
- 125g of cooking cream
- Preheat the oven at 200 C.
- Peel and cut the apples in cubes
- Add the brown sugar, the cinnamon and the raisins to the apples and mix with the hand.
- In a pan, add the 15g of butter and the apples. Cook on a medium fire. And gradually add the cooking cream. The apples shouldn’t be fully cooked. They will be put in the oven later on.
- For the pastry: Mix the flour + sugar + butter + almond powder + salt with your hands (and gloves ).
- Place the apples in a baking dish (or in several smaller ones) then sprinkle the crumble mixture all over the apples.
- Press it down firmly (don’t exaggerate) The tighter it is crammed together the crispier it will be. Bake for 35 to 40 minutes or until the crumbles take a gold (a bit brown) color.
- Leave it to rest for 10 to 15 minutes and serve warm alone or with a scope of vanilla or caramel ice-cream, fruits, or plain.
